It is extracted from soybean oil by a heating and drying process. Lecithin is naturally produced by the liver and it naturally occurs in some foods such as egg yolk and soybean.
It is highly soluble in water, has a neutral flavour and is slightly brown in colour. It has many applications as an antioxidant in pharmacy and cosmetics, and in the food industry it is used as a natural emulsifier in margarine, cookies, chocolates, bonbons, candies, chewing gum, dairy desserts, ice creams, special breads and baked products.
DAYELET SOY LECITHIN is the same emulsifier found in egg yolk and it provides the same nutritional properties, linking fat and water molecules. It cannot withstand very high temperatures since it decomposes and gets dark above 80ºC.

DAYELET SOY LECITHIN is commonly used in gastronomy to thicken all types of sauces in doses between 0.2% and 0.3%. If the addition levels are increased between 0.5% and 0.8%, and the product is agitated in any cold solution, you will obtain liquids with bubbles known as “flavour air or foam” which provide endless tastes; sweet or salted, from fruits, vegetables or cheeses, etc.
