Our DAYELET AMERICAN GUM is a brownish white powder which dissolves in cold or hot conditions by strong shaking. In fondants, it provides elasticity to obtain a great non-sticking gum paste due to its drying properties; ideal for decorating cookies with icing.
For preparing cupcake decorations, you may add 250g of fondant to easily knead and mould. Besides its many uses in sugared dough, it may be used in liquid recipes, where it provides an inner structure that stabilises and thickens fluid contents.
DAYELET AMERICAN GUM acts as a thickener gum in cold conditions, whereas in hot conditions it acts as a gelling agent, preventing sugar crystallizations.
IIt hydrates properly at room temperature. In order to form gels, it needs to be heated up to 40/60º C.
t achieves good results at a pH of between 5 and 11, at also in alcoholic beverages (ABV 40%). It stabilises protein foam. Its addition levels vary, as a thickener the addition should be minimal, between 0.1% and 0.5%; and as a gelling agent, between 1% and 2%.

Solutions hydrate completely within an hour, and hydration may be improved using other humectants, such as DAYELET GLYCEROL. To avoid lumps, it is necessary to mix it well using an electric mixer. DAYELET AMERICAN GUM is the most inexpensive gum among its range: a small amount is enough for an excellent performance.
